Soft Sugar Cookies

Ingredients

  • 1/2 cups butter
  • 1 cup sugar
  • 2 eggs
  • 3/4 tsp salt
  • 1.5 tsp baking powder
  • 1.5 tsp xanthum gum
  • 1 tsp vanilla
  • 3 cups of rice flour blend
    • 2 parts rice flour
    • 1 part tapioca starch
    • 1 part potato starch

 


Directions

  1. Cream butter and sugar
  2. Add eggs & mix until well combined
  3. Add salt, baking powder, xanthum gum & vanilla
  4. Add rice flour blend and mix
  5. Cover bowl with plastic wrap & chill for at least an hour
  6. Roll & cut
  7. Bake for 180C 8-12 minutes
